Sabudana Kheer(Sago Milk Pudding)


Preparation Time: 31-40 minutes
Cooking time: 41-50 minutes
Servings: 4

Ingredients:

  • ¼ cup soaked Sago (sabudana),
  • 1 Litter Milk
  • pinch of Saffron (kesar)
  • Few nuts
  • ¼ cup or to taste Sugar 
  • ¼ teaspoon Green cardamom powder

Preparation:

  • Soak saffron flakes in a 1/4 cup of hot milk for 10 minutes
  • Soak the sabudana in water for 10-15 minutes.

Method:

  1. Boil the milk in a deep non stick pan. Add the saffron powder and add the sabudana after draining the water.
  2. Cook on low heat until the sabudana becomes swollen and translucent.
  3. Stir continually until the sabudana is fully cooked and the kheer thickened.
  4. Add nuts of your choice, sugar and green cardamom powder and mix well. Serve it hot or chill and serve.

Note: soak time totally depends on quality of sabudana/sago. some Varieties need to soak the Sago for 15-20 minutes  or overnight and some quick cooking variety doesn't need soaking at all.
