Theplas can be made 'healthy' by skipping the oil that is considered so essential to cook them. They also make a great travelling snack, as they stay well for a couple of days without refrigeration.

Ingredients

  • 1 cup grated bottle gourd (doodhi / lauki)
  • 2 cups whole wheat flour (gehun ka atta)
  • 1/2 cup low fat curds (dahi)
  • 1/2 teaspoon turmeric powder (haldi)
  • 1 teaspoons oil
  • 1 teaspoon sugar (optional)
  • 1 tablespoon Sesame seeds (optional)
  • 1/2 teaspoon carom seeds/ajwain(optional)
  • Whole wheat flour (gehun ka atta) for rolling
  • 1 Chopped green chilli or to taste
  • 1/2 teaspoon chilli powder or to taste
  • Salt to taste
 

Method:

  1. Mix all the ingredients and knead into a soft dough using water only if required.
  2. Divide the dough into equal portions.
  3. Roll out each portion thinly into 5-6” diameter circle using a little wheat flour for rolling.
  4. Heat a  tava (griddle) and cook each thepla till golden brown spots appear on both the sides.
  5. Serve hot.
